High-oleic sunflower oil is produced from special varieties of sunflower, which has a high content of the monounsaturated fatty acid Omega-9 (at least 75%) and a low content of the polyunsaturated fatty acid linoleic Omega-6. High-oleic oil is more resistant to oxidation, high temperatures and has a longer shelf life compared to ordinary sunflower oil.
